Butter Chicken - Chicken Tikka Masala
Serves 4 | Prep under 30 mins

INGREDIENTS
8-10 pieces of Tandoori Chicken
3 cups of canned peeled whole tomatoes in tomato puree
green chilies, seeded and chopped fine, or half a teaspoon of ground red chili
pepper to taste

2 tablespoons of ginger root, peeled and chopped fine
10 tablespoons of butter
4 teaspoons of ground cumin
1 tablespoon of paprika
2 teaspoons of salt
1 and half cups of heavy cream
2 teaspoons of garam masala
A quarter cup of cilantro leaves, chopped 
METHOD
1. If you like, you may de-bone the chicken pieces for easier handling in this recipe.
2. If you cannot find canned whole peeled tomatoes in puree, just use 2 cans of whole peeled
tomatoes and their juice along with 1 can of tomato puree. Combine the tomatoes, chilies and
ginger and set aside.
3. Place 8 tablespoons of the butter in a large heavy fry pan or cooking pot on medium
heat. Coat the pan with melted butter and sear all the chicken pieces a few at a time until they
are slightly browned. Set them aside in a bowl as you finish each batch until all are done.
4. Add the cumin and paprika to the buttery pan along with any chicken juices that have accumulated and cook while stirring constantly for 5-15 seconds just to let the flavors come out. Add the tomato, chili and ginger combination and cook uncovered until the sauce thickens a little. Then add the cream and salt and combine. Then add the seared chicken pieces along with any juices that have accumulated in the reserved bowl. Gently stir to combine, and reduce
to medium-low heat and simmer uncovered until a sheen develops on top of the sauce to show that the fat in the cream is starting to separate. You must check and stir the sauce often to make sure that the cream does not scald or burn and give a bad taste to the dish.
5. When done, stir in the last 2 tablespoons of butter, remove from heat and let this dish stand for 10-20 minutes, then fold in the cilantro leavesand serve with rice. This dish keeps well in the fridge or freezer for reheating later. 


Brandied Chicken Breast
Serves 2 | Prep 25 mins

INGREDIENTS
4 boned and skinned chicken breast
One-third cup of flour
Half a teaspoon of salt
Ground pepper
A quarter teaspoon of tarragon leaves
A quarter cup of butter
One-third cup of apricot brandy
Three-fourth cup of chicken broth
Half a cup of sour cream 
METHOD
1. Mix floursaltpeppertarragon. Dredge chicken in flour mixture.
2. Melt butter, fry chicken until browned. Add brandy, flame.
3. Add broth, simmer covered 10 minutes or until done.
4. Add sour cream, warm and serve. 


Barbecued Chicken

INGREDIENTS
4 seeded and sliced Red chilies (Lal Mirchi)
2 chopped Garlic cloves (Lasun)
5 small Onions (Pyaj)
2 teaspoons of crushed Brown Sugar (Cheeni)
Half a cup of Coconut Cream (Nariyal Malai)
2 teaspoons of Fish Sauce
1 tablespoon of Tamarind Water (Imli Ka Pani)
4 boneless Chicken Breasts
As required Basil Leaves (Tulsi)
As required Coriander Leaves (Dhania Patta)
As required Salt (Namak) 
METHOD
1. Grind chiliesgarlic and onion to make a paste like mixture.
2. Combine sugarcoconut creamfish saucetamarind water and salt.
3. Stir continuously.
4. Make cut 4 slashes in chicken breast.
5. Place chicken in a shallow dish.
6. Pour over spice mixture.
7. Turn to coat. Cover dish. Place it aside for 1 hour.
8. Place chicken on a piece of foil.
9. Grill chicken for about 4 minutes a side. Bast occasionally till cooked thoroughly.
10. Garnish with basil or coriander leaves. 


Baked Chicken Parmesan
Serves 5 | Prep 20 mins

INGREDIENTS
broiler fryers
2 and a quarter cups of bread crumbs
Two-third cup of Parmesan cheese
3 tablespoons of parsley
1 teaspoon of salt
Three-fourth cup of butter
1 teaspoon of Dijon mustard
Half a teaspoon of Worcestershire cheese
1 small garlic clove 
METHOD
1. Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).
2. Rinse chicken and pat dry.
3. Combine crumbscheeseparsley and salt.
4. In saucepan, melt butter. Beat in mustardWorcestershire cheese and garlic.
5. Dip chicken in butter, and then roll in crumbs. Pat in shallow pan.
6. Bake 1 hour or until golden.


Balti Chicken Pasanda
Serves 4 | Prep under 30 mins

INGREDIENTS
1 and half pounds of chicken, boneless & skinless, cut into 2 inch size pieces
1 large onion, finely chopped
1-inch piece of ginger, peeled & finely minced
2 cloves of garlic, finely minced
2-3 small Thai green chilies, finely chopped
1 cup of good quality yogurt
1 teaspoon of cumin seeds
2-3 green cardamom pods, crushed
cinnamon stick (2 inches in length)
4-6 whole black peppercorns
1 tablespoon of garam masala (plus a little extra for garnish)
Half a tablespoon of red chili powder, to taste
Salt to taste
2 tablespoons of tomato paste
6-8 almonds, skinned & ground into a fine powder
Half a cup of light cream
2-3 tablespoons of oil, vegetable or canola
Finely chopped cilantro leaves for garnish 
METHOD
1. In a large mixing bowl, combine the yogurt along with the gingergarlic and green chilies. Mix well and then add the spices (cumin seeds, cardamom pods, cinnamon stick, black peppercorns, garam, masala, red chili powder and salt).
2. Stir well to combine and then add the chicken pieces. Let marinate in the refrigerator (covered) for at least 4-6 hours, but overnight is best.

3. In a large deep skillet or wok on medium heat, add the oil. When hot, add the onions and stir fry for 4-5 minutes until slightly browned. Next, very carefully add only the chicken pieces (shake off any excess marinade & reserve the marinade for later).
4. Then add both the tomato & almond paste and stir well to combine all of the ingredients. Reduce the heat to a gentle low simmer and add any remaining marinade. Mix well and let cook for 10-12 minutes or until the chicken is fully cooked and tender. Finish the dish with the cream and garnish with freshly chopped cilantro leaves & a light sprinkle of garam masala. Serve with fresh naans and fragrant Basmati rice. 


20-Minute Chicken Parmesan 
Serves 4 | Prep 25 mins

INGREDIENTS
4 boneless and skinless chicken breast halves (about 1lb)
egg, slightly beaten
Half a cup of seasoned bread crumbs
2 tablespoons of butter
2 cups of Prego spaghetti sauce
Half a cup of shredded Mozzarella cheese
1 tablespoon of grated Parmesan cheese
A quarter cup of chopped fresh parsley 
METHOD
1. Using palm of hand, flatten chicken to even thickness.
2. Dip chicken into egg then into crumbs to coat.
3. In skillet over medium heat, in hot butter, brown chicken on both sides.
4. Add Prego sauce. Reduce heat. Cover and simmer 10 minutes.
5. Sprinkle with cheeses and parsley. Cover, simmer 5 minutes or until cheese melts.
