Berry Banana Bread


Berry Banana Bread
Serves 6 | Prep 75 mins

INGREDIENTS
1 cup fresh berries (blueberries, blackberries or raspberries)
1,75 cups flour, sifted
2 teaspoons of baking powder
Half a teaspoon of salt
A third of a cup of butter
Two thirds of a cup of sugar
eggs
1 ripe banana, mashed
METHOD
1. Wash berries gently. Drain and sprinkle 2 tablespoons of flour onto them and toss lightly. Sift together remaining flourbaking powdersaltand baking soda.
2. Beat butter in to cream it. Gradually add sugar and continue beating until light and fluffy. Beat in eggs, a little at a time. Add banana in 3 parts. Fold in the berries carefully.
3. Spoon batter into a greased loaf pan; bake at 220 degrees Celsius for 50 minutes, or until done.


Chocolate Apple Bread
Serves 10 | Prep 60 mins

INGREDIENTS
Topping
1 tablespoon of sugar
Half a teaspoon of cinnamon
Half a cup of chopped walnuts or pecans

Bread
4 cups of all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
Half a teaspoon of nutmeg
1 cup of butter, softened
2 cups of sugar
eggs
2 teaspoons of vanilla extract
A quarter of a cup of buttermilk
3 cups of coarsely chopped apples
1 cup of chopped walnuts
350g of semi-sweet chocolate chips 
METHOD
For the topping
1. In a cup, combine sugarcinnamon and walnuts, and set aside.

Bread:
1. Preheat oven to 220 degrees Celsius. Grease two small loaf pans. In small bowl, combine flour, strong>salt, baking powderbaking soda,cinnamon and nutmeg, and set aside.
2. In a large bowl, beat butter and sugar until creamy. Add eggs and vanilla extract; mix well. Gradually beat in flour mixture alternately withbuttermilk. Stir in appleswalnuts, and chocolate chips. Pour into prepared pans. Sprinkle with topping.
3. Bake for 50-60 minutes, until a cake tester inserted in centre comes out clean. Cool for 15 minutes; remove from pans. Cool completely. Makes 2 loaves.
